Why our sheet pan stays flat

A pan that warps in the oven tips the butter and browns unevenly. Ours is heavier-gauge aluminized steel with a rolled rim that stiffens the whole perimeter. Every batch spends an hour at 500 degrees in a test oven before it ships.
